I love pasta. I could eat it every day. But I don’t. It’s hard, but I don’t.
I want to though. I really do.
This pasta dish combines so many things that I love and is a really great, quick meal that went over well with my family. It took barely any time to throw together, and the kids gobbled it up.
The sauce is delicious and savory, and the red wine really brings it to a whole new level. The chicken is extremely tender and delicious and with some freshly grated pecorino romano cheese sprinkled on top, it is probably my new favorite pasta. Well…next to this one maybe…or this one…or even this one.
Yeah. I want some more now.

Ingredients
- 2 tbsp olive oil, divided
- 4 - 4 oz. boneless, skinless chicken breasts, cubed
- 2 green peppers, diced
- 2 red peppers, diced
- 1 sweet onion, diced
- 3 garlic cloves, sliced thin
- 2 tsp salt
- ½ tsp pepper
- 1 tsp garlic powder
- 1 tsp sugar
- 1 tbsp Italian seasoning
- 1 cup red wine
- 2 15 oz. cans diced tomatoes
- 1 15oz can crushed tomatoes
- Hot, fresh cooked pasta
- Pecorino Romano cheese, grated, for serving
