This is another one of those quick and easy meals that my family loves! It comes together so quickly, tastes so good, and literally will be something that your whole family asks for again and again.
The creamy chicken and sweet and spicy tomatillo flavor makes for a unique casserole dish, that still has some of that comfort food feel. We have put this on our meal rotation now…it is a family favorite!
Creamy Tomatillo Rice and Chicken

This easy, one pan meal, will be your go to on busy nights!
Ingredients
- 1tbsp olive oil
- 4 chicken breasts, cubed
- ¼ cup onion, diced
- 2 garlic cloves, minced
- 1 small can of mild green chiles
- 1 green pepper, diced
- 2 cups tomatillo salsa
- 1 cup chicken broth
- 1 4 oz block cream cheese, cubed
- 2 tbsp sour cream
- 4 cups cooked brown rice
- 2 cups Monterey Jack Cheese, shredded
- Cilantro for serving
Instructions
- Heat olive oil in a large saute pan
- Add chicken cubes, and cook each side until golden brown, about 3 minutes per side
- When you flip the chicken for the other side to cook, add onion and garlic
- Saute until golden and translucent
- Add green pepper, cook for one minute
- Add green chiles, salsa and chicken broth
- Simmer for until bubbling
- Add cream cheese and sour cream and stir until creamy, cook for one minute
- Add cooked rice and fold in until coated with chicken mixture
- Sprinkle with shredded cheese
- Turn of the flame and cover until cheese melts, or put under the broiler for 3-5 minutes for a golden brown finish
- Serve hot with chopped cilantro
